This dairy-free, soy-free banana bread recipe is moist and healthy. Super easy to bake and made with 4 bananas and coconut oil.
We have doubled the consumption of bananas in this household since having a child. R eats a whole banana everyday, but every once in a while we end up with a few that get too ripe. We like our bananas almost green and so the life of a banana in our household is very short.
I hate wasting food, so when the bananas get a little too soft for our tastes, I bake banana bread. Sometimes I buy extra bananas just so when they ripen, I can bake banana bread. What can I say? I like baked goods.
So today, I am sharing with you a dairy-free version of this classic: Dairy Free Banana Bread recipe!
These days there are a million versions of Banana Bread recipes on the web, but I am a no-nonsense baker. Unless I am hosting the Queen, you won’t see me sifting the flour or using several bowls for one recipe. These days, I bake during nap times, so I need things to be fast and fool-proof.
That is why I love this recipe! No need to separate ingredients, just dump everything in a bowl and you are good to go. By using parchment paper instead of greasing the pan, I also cut on cleaning time and can easily take the loaf out without having to scrape my loaf pan. Win-win!
I talked about taking time to relax during nap time instead of doing everything else in one of my Instagram posts and there is nothing more relaxing than grabbing a cup of tea and a slice of this dairy free banana bread and enjoying a moment of silence.
Mom life is hard and sometimes, you just need to recharge so you can do it all over again for a few more hours. So my friends, if you are needing some comfort food and down time, bake this dairy free banana bread for yourself and enjoy it! You deserve it!
xoxo
