Instructions
Korean Fried Chicken
Season the raw chicken with rice vinegar, salt, pepper and grated ginger. Set it aside for 5 minutes while you gather ingredients for the sauce.
Coat the chicken with corn starch.
Heat frying oil on medium heat to 350F.
Place chicken pieces slowly in the oil, making sure to leave enough space around each piece so the pieces of chicken don't touch during frying.
Fry each piece of chicken for 3-5 minutes or until chicken is cooked. Turn the chicken once during frying. Remove the chicken from oil and place it on a paper towel.
Once all the chicken has been fried, return the chicken to the hot oil again a few pieces at a time for a second time. Fry it until each piece of chicken is golden brown and crispy (2-3 minutes).
Korean Fried Chicken Sauce
In a small sauce pan, combine all the ingredients for the sauce. Bring it to a boil and turn heat to low. Cook it for a couple minutes and turn it off.
Korean Fried Chicken
Pour 3/4 of the hot sauce over the fried chicken and mix to coat all pieces. Serve remaining sauce on the side for dipping sauce.
