Ingredients

Korean Fried Chicken

  • 2 lb Chicken (any parts)
  • 2-3 tbsps rice vinegar
  • 1 tbps fresh ginger grated or ginger paste
  • salt and pepper to taste
  • 2 cups corn starch
  • vegetable oil for frying

  • 2 Tbsps garlic minced small
  • 1 Tbsp sesame oil
  • 2 Tbsps Gochujang
  • 3 Tbsps ketchup
  • 2 Tbsps soy sauce
  • 1/4 cup honey
  • 1/4 cup brown sugar (light or dark)

Instructions

  • Season the raw chicken with rice vinegar, salt, pepper and grated ginger. Set it aside for 5 minutes while you gather ingredients for the sauce.

  • Coat the chicken with corn starch.

  • Heat frying oil on medium heat to 350F.

  • Place chicken pieces slowly in the oil, making sure to leave enough space around each piece so the pieces of chicken don't touch during frying.

  • Fry each piece of chicken for 3-5 minutes or until chicken is cooked. Turn the chicken once during frying. Remove the chicken from oil and place it on a paper towel.
  • Once all the chicken has been fried, return the chicken to the hot oil again a few pieces at a time for a second time. Fry it until each piece of chicken is golden brown and crispy (2-3 minutes).

Korean Fried Chicken Sauce

  • In a small sauce pan, combine all the ingredients for the sauce. Bring it to a boil and turn heat to low. Cook it for a couple minutes and turn it off.

Korean Fried Chicken

  • Pour 3/4 of the hot sauce over the fried chicken and mix to coat all pieces. Serve remaining sauce on the side for dipping sauce.
