Cuban Pork or Lechon Asado
Cuban pork roast or lechon asado cubano is one of my favorite slow cooker recipes to make for an easy family dinner. It's cooked in a tangy mojo and makes the best cuban sandwiches ever!
Servings: 16 people
- 8 lbs pork shoulder
- bay leaves
- 8 tablespoons of pureed garlic 16-20 gloves
- 8 teaspoons oregano
- 8 cups yellow onions chopped
- 1 cups fresh lime juice (about 8 limes)
- 2 teaspoons black pepper
- 1 teaspoon red pepper flakes
- 4 teaspoons cumin
- 1 cups fresh orange juice (about 3-4 large oranges)
- 4 teaspoons salt
- vegetable oil
In a skillet or griddle, in medium high heat, add some vegetable oil and brown the meat.
Add all the ingredients to the slow cooker and cook for 8 hrs on low.
Pull the pork apart.
Strain the juice and enjoy au jus or add 1 teaspoon of cornstarch to make it thick enough to pour over meat.
