Ingredients

Sausage and Bacon Filling

  • 4-6 slices of Wright® Brand Hickory Smoked Bacon
  • 1/2 yellow onion diced small
  • 2 large cloves of garlic
  • 1 lb Jimmy Dean® Roll Sausage (1 package)
  • 1/3 cup tomato paste
  • 1 tsp cumin
  • 1 tsp paprika
  • 20 kalamata olives pitted and diced small
  • 4 oz tomato juice (1/2 cup)
  • 3 packages of store bought pie crust (6 rolls total)
  • 1 egg to brush on dough before baking (to egg wash)
  • 1 tsp milk, cream or water (for egg wash)

Instructions

Cooking the Sausage and Bacon Pie Filling

  • With kitchen shears or sharp kitchen knife, cut the bacon slices into small strips.
  • Cook the small pieces of bacon until the fat is rendered over high heat.
  • Add the sausage and cook until the meat is brown.
  • Add the onions, garlic and spices and cook until onions are soft and translucent.
  • Add tomato paste and olives and mix well. Cook for 3 minutes and remove from heat.
  • Let it cool before filling the dough.

Assembling the Sausage Hand Pies

  • Preheat oven to 375F.
  • Make the dough or bring the store bought pie dough to room temperature.
  • Roll out dough and cut it into 15 circles, 3 inches around.
  • Use a tablespoon to fill the dough and press the dough closed.
  • Decorate the edges and place the hand pies onto a baking sheet lined with parchment paper.
  • Combine egg and water to make an egg wash. Egg wash the hand pies and poke a small whole to vent on the dough.
  • Bake it for 18-20 mins until golden brown. Check to see if the baking sheet needs to be turned aoround for even baking halfway.
  • Remove from oven, place pies in cooling rack for 5 minutes and serve.

Notes

The filling for this recipe makes 45 mini hand pies (3 inches round). At this size, I would serve 3 small hand pies per guest as an appetizer.
It makes 16-17 large hand pies or hot pockets (5 inches round). For this size, 1 hand pie per guest is plenty for an appetizer. 2 per person will be great for dinner.
