Cucumber tomato salad is the perfect side dish for any summer lunch or dinner. It's refreshing, healthy, delicious and as easy as a salad can be! Made with fresh tomatoes, cucumbers, bell peppers, onions and herbs and finished off with an apple cider vinaigrette.

Ingredients

  • 1 English cucumber
  • 8 oz cherry tomatoes
  • 1/2 red onion
  • 3 sprigs dill
  • 2-3 tbsps olive oil
  • 2-3 tbsps apple cider vinegar
  • salt and pepper to taste

Instructions

  • Combine all ingredients in a bowl and drizzle the oil, apple cider vinegar and salt and pepper. Toss it well until everything is coated.
  • Refrigerate or serve.
