Best Gumbo Recipe
This homemade gumbo soup recipe is absolute the best and easiest dinner you will make this fall. Made with sausage, okra and black-eye peas, it's not authentic, but it is super delicious and ready in just 30-40 minutes!

- 1 cup green bell pepper
- 1 cup onion
- 1 cup celery
- 1 can diced tomatoes
- 1 pkg frozen okra
- 2 cans black eye peas with jalapeño peppers
- 1 tsp chilli powder
- 1 pkg Polish sausage
- 12 oz tomato juice
- water or broth to thin the gumbo optional
- salt and pepper to taste
Chop the green peppers, onion and celery into small pieces. Cut the Polish sausage into bite size slices.
Sauté bell pepper, onion and celery.
Add remaining ingredients, mix well and cook until boiling. Once it boils, reduce heat and simmer for 30 minutes.
Add water or broth to thin it if the gumbo is too thick for you. It should have a soup like consistency, but not too much liquid.
Don't drain the black eye peas.
