Cajun Shrimp and Sausage

Ingredients

  • 1 lb frozen or fresh medium shrimp
  • 12 oz smoked beef sausage or andouille sausage
  • 2 bay leaves
  • 14 oz canned diced tomatoes
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1/2 yellow onion diced
  • 3 garlic cloves minced
  • 1 tbsp olive oil
  • 1 tbsp cajun seasoning
  • 1/4 tsp chipotle pepper powder
  • 1/2 tsp turmeric powder
  • salt to taste

Instructions

  • In a pan, heat olive oil. Sauté the onions and garlic for a couple minutes. 
  • Add the sausage and sauté for 3 minutes. 
  • Add bell peppers and all seasoning (except salt-see note) and sauté for 2-3 minutes. 
  • Add the diced tomatoes and stir well. Let it cook for 15-20 minutes. 
  • Add the shrimp and cook it until the shrimp is no longer translucent (white/pink) - about 5-10 minutes.
  • Remove from heat and serve.

Notes

If you use store bought cajun seasoning, make sure to read the label to see if it already includes salt. If yes, only add salt to taste towards the last 5 minutes of cooking. 
If your cajun seasoning does not include salt, add a 1/4 tsp while sautéing the bell peppers and taste after cooking it for 15-20 minutes to adjust to taste.
