I love a simple and delicious chicken salad in the summer served over greens or on a nice piece of bread.
And as far as chicken salads go, I really like the combination of sweet and sour, and crunchy and soft textures. In this chicken salad, the sweetness is added by the grapes, apples, and honey (optional). The sourness is a mix of sour cream, lemon juice and mayonnaise. The walnuts and celeries add the crunch and the chicken adds the softness.
It’s a super easy lunch for the whole family to enjoy in the backyard or a recipe to impress your friends during barbecues.
Recipe Notes on Ingredients and Substitutions
Chicken: I like to use rotisserie chicken for this salad to make things even easier. You can also use leftovers from grilled or roasted chicken or pan fry chicken breasts fresh for this recipe. I personally like to save time by grabbing an extra rotisserie chicken at my grocery store and using all the meat for this salad.
Because rotisserie chicken has a mild flavor, it doesn’t overwhelm the salad dressing with other seasonings. PLUS, if you use the rotisserie chicken after it has been refrigerated, it cuts down on the extra step of waiting for the chicken to cool.
Apples: You can use a sweet gala apple or add more acidity by using a granny smith. I usually use what is always available in my fridge which is a honeycrisp or fuji apple. I also like to peel the skin and cut it into matchsticks to get apples in every bite, but you can leave the skin on and cut into larger chunks to save time
Grapes: I like to use red grapes for color contrast, but green grapes work just as well.
Walnuts: Pecans are a great substitute. Just halve them and leave them chunky for texture. You can also use candied walnuts and forgo the optional honey.
Sour Cream: You can substitute it for plain greek yogurt.
Tarragon: This herb adds a wonderful sweet flavor to the salad, but if you don’t like it or can’t find it, you can substitute it for other herbs like parsley or leave it out all together. Tarragon is also sold dried in the spice aisle.
Mayonnaise: I am partial to real mayonnaise for it’s tanginess. For this recipe I used Heinz mayonnaise.
Vinegar: I used Heinz apple cider vinegar for this recipe. Heinz white vinegar would also work.
Honey (optional): I love the sweetness of honey in this recipe, but it’s completely optional depending on your taste buds and of course the sweetness of the grapes and apples used in this chicken salad.
