I am always craving one food or another. My husband makes fun of me because I crave recipes ALL the time. What can I say? I just love good food!
Well, this week I’ve been craving Korean food. Yesterday I made Korean Pork Chops and my little guy surprised me by eating it at dinner. So I decided to make a batch of Korean Fried Chicken today.
Lately I have been cooking a lot. With my husband working from home and my little man growing so much, it’s like I am cooking 3 meals a day, everyday.
I am also batch cooking and freezing food to get ahead of summer, when we get busy with life and cooking is the last thing in my mind.
How to Make Korean Fried Chicken
There are 3 things that make this recipe for Korean fried chicken work. Gochujan sauce, corn starch and second fry.
Gochujan
Gochujan is a spicy and sweet Korean barbecue sauce that you must have in this dish to make it Korean. It’s absolutely delicious! It’s not always available at grocery stores, but you can order it here.
Since gochujan is the ingredient that gives this recipe some heat, you can add more if you like it hot.
Corn Starch
Corn starch is gives the chicken a thinner, but crunchier coat. And it sticks to the chicken a lot better than plain flour.
Once you coat the chicken in corn starch, leave it to rest for a couple minutes before frying to make sure it adheres to the chicken well.
Second Fry
Don’t skip this step because it makes the chicken so crispy! It also makes it ready to take on the sweet and spicy sauce!
Korean Fried Chicken
Ingredients
Korean Fried Chicken
- 2 lb Chicken (any parts)
- 2-3 tbsps rice vinegar
- 1 tbps fresh ginger grated or ginger paste
- salt and pepper to taste
- 2 cups corn starch
- vegetable oil for frying
Korean Fried Chicken Sauce
- 2 Tbsps garlic minced small
- 1 Tbsp sesame oil
- 2 Tbsps Gochujang
- 3 Tbsps ketchup
- 2 Tbsps soy sauce
- 1/4 cup honey
- 1/4 cup brown sugar (light or dark)
Instructions
Korean Fried Chicken
- Season the raw chicken with rice vinegar, salt, pepper and grated ginger. Set it aside for 5 minutes while you gather ingredients for the sauce.
- Coat the chicken with corn starch.
- Heat frying oil on medium heat to 350F.
- Place chicken pieces slowly in the oil, making sure to leave enough space around each piece so the pieces of chicken don't touch during frying.
- Fry each piece of chicken for 3-5 minutes or until chicken is cooked. Turn the chicken once during frying. Remove the chicken from oil and place it on a paper towel.
- Once all the chicken has been fried, return the chicken to the hot oil again a few pieces at a time for a second time. Fry it until each piece of chicken is golden brown and crispy (2-3 minutes).
Korean Fried Chicken Sauce
- In a small sauce pan, combine all the ingredients for the sauce. Bring it to a boil and turn heat to low. Cook it for a couple minutes and turn it off.
Korean Fried Chicken
- Pour 3/4 of the hot sauce over the fried chicken and mix to coat all pieces. Serve remaining sauce on the side for dipping sauce.
